About Yoshimi Kato - Yoshimi Kato is the son-in-law of Hiroshi Kato, the man who originally made some of our most popular Masakage lines and was a founding member of Takefu Knife VIllage. The torch has been passed and Yoshimi-san has stepped up to fill some big shoes and take over those lines. Yoshimi-san apprenticed at Kanehiro Hamono under the guidance of Hiroshi-san, who has also taught amazing blacksmiths like Yu Kurosaki. The transition has been seamless. He tells us he strives to continuously improve his skill day by day. We look forward to working with the next generation Kato for many years to come!
About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. “Gyuto” translates to “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.
