About the shape - Inspired by the profile of a traditional European chef knife, gyutos are a multi purpose knife with a slight meat cutting bias and “gyuto” even translates to “cow sword”. About Kiyoshi Kato: The online community is abuzz with praise for blacksmith Yoshiaki Fujiwara. Based in Yamanashi prefecture, he is a 3rd generation swordsmith who crafts his knives using hand-made damascus and traditional techniques like forge welding and folding. Born in Tokyo in 1944, he learned the craft from a family of swordsmiths and began making Western-style knives in 1977. He even uses the same inscription as his predecessor, Fujiwara Yoshiaki, on his cutlery and other pieces. In 2000, he relocated his workshop from Meguro to Hokuto City.
