Shapton RockStar Stone 1000 Grit
Every knife being resharpened touches this stone. Either this is the starting place or to be used after your coarse grit stone. We recommend finishing most non-Japanese knives with this stone, but if you are the kind that wants to get an extra 20% out of everything you will want to take those Henckels to 4000 or 8000 and really have them sing.
When to use this stone:
- Excellent quality edges on western steel or an in-between stone on Japanese knives.
- Develops a little mud, good for a foggy finish, but more biased towards microbevel sharpening.
- Great stone for touchups.
